High-Fibre Waffles

INGREDIENTS

Makes 6 rectangle waffles 

  • 1 ½ cups of milk
  • 1/3 cup NuVitality LSA with Chia
  • 1/3 cup NuVitality Fibreworks
  • 1/3 cup NuVitality Linseed Meal
  • 2 tbs coconut sugar
  • 3/4 cup wholemeal spelt flour
  • 1 tsp baking powder
  • 2 eggs, lightly beaten
  • Pinch of salt
  • Kale (optional)

DIRECTIONS

  1. Whisk all ingredients except kale together until smooth. Spoon into preheated waffle iron and place 1 leaf of kale in each waffle (for savoury) or leave plain (for sweet).
  2. Cook until golden and serve with a fried egg (for savoury) or yoghurt and fruit (for sweet).
