Berry Coconut Ice Cream


  • 2 cups NuVitality Raw Cashews, soaked in boiling water for 10 minutes and drained
  • 800mL coconut cream
  • ½ tsp guar gum/xanthan gum (available at supermarkets)
  • 2 tbs maple syrup
  • 2 tbs vanilla bean paste
  • 2 cups mixed berries


  1. Place cashews, coconut, gum, maple, and vanilla into a high speed blender and blend until completely smooth
  2. Set aside
  3. Place berries into the same blender jug, and pulse until the berries at slightly pureed
  4. Pour coconut ice cream and berry mixture into a baking paper lined container or tin, layering each flavor. You can use a skewer to swirl the berry mixture through the ice cream mixture if you like.
  5. Freeze overnight and serve slightly softened
