Halloumi Salad with Quinoa, Orange & Roasted Almonds


  • 2 cups NuVitality Quinoa, cooked and cooled
  • ¾ cup NuVitality Roasted Almonds, chopped
  • 1/3 cup continental parsley, roughly torn
  • Juice and zest of one orange
  • ¼ cup extra virgin olive oil
  • 1 tsp salt
  • Black pepper to taste
  • 250g Halloumi, sliced


  1. Place sliced halloumi into a non-stick pan and fry until golden on each side
  2. In another bowl, place all other ingredients and combine well
  3. Serve on plates and top with slices of grilled halloumi
