Dukkah-Roasted Carrots with Pepita Butter

INGREDIENTS

Serves 4 as a side

Dukkah

  • 1 Cup NuVitality Roasted Cashews
  • ½ Cup NuVitality Sesame Seeds
  • 1 tsp salt
  • 1 tbs ground cumin
  • 1 tbs ground coriander

Carrots

  • 1 large bunch dutch carrots
  • ¼ cup extra virgin olive oil

 

Butter

  • ½ cup NuVitality Pepitas
  • ¾ cup water
  • Juice and zest of 2 lemons
  • 1 tsp salt

DIRECTIONS

  1. Preheat oven to 180 degrees Celsius.
  2. Pulse cashews in blender until crumbs form and mix with remaining dry ingredients (except carrots).
  3. Place carrots onto lined baking tray and drizzle with olive oil then sprinkle with ½ cup dukkah (keep the remainder for next time).
  4. Bake for 50 minutes.
  5. Meanwhile blend all butter ingredients in a high-speed blender until smooth.
  6. Smear the pepita butter over a plate and top with dukkah-roasted carrots to serve.
