Blueberry Muffins with Psyllium

INGREDIENTS

  • 2 cups spelt flour
  • ¾ cup coconut sugar
  • 4 tsp baking powder
  • ¼ tsp salt
  • ¼ cup NuVitality psyllium husk
  • 1 egg
  • 1 cup milk
  • ½ cup extra virgin olive oil
  • ½ cup blueberries plus extra to top with

DIRECTIONS

  1. Preheat oven to 180 degrees Celsius
  2. Place all wet ingredients into a bowl and combine well
  3. Add dry ingredients and mix until just combined
  4. Spoon equal amounts of batter into each hole of a non-stick muffin pan and top with extra blueberries
  5. Bake for 20 minutes or until a skewer comes out clean
  6. Cool and serve
