Blueberry Muffins with Psyllium
INGREDIENTS
- 2 cups spelt flour
- ¾ cup coconut sugar
- 4 tsp baking powder
- ¼ tsp salt
- ¼ cup NuVitality psyllium husk
- 1 egg
- 1 cup milk
- ½ cup extra virgin olive oil
- ½ cup blueberries plus extra to top with
DIRECTIONS
- Preheat oven to 180 degrees Celsius
- Place all wet ingredients into a bowl and combine well
- Add dry ingredients and mix until just combined
- Spoon equal amounts of batter into each hole of a non-stick muffin pan and top with extra blueberries
- Bake for 20 minutes or until a skewer comes out clean
- Cool and serve
